Vegetarian Couscous with Feta

This is an awesome recipe, and you can substitute the veggies however you want...

Vegetarian Couscous with Feta

1 tbsp butter (I use olive oil or margarine)
2 cloves garlic, chopped (or just 1 tsp garlic powder)
1 onion, chopped
2-3 stalks celery, sliced
1 yellow or green pepper, diced
1 red pepper, diced
1 can diced tomatoes with juice
½ cup orange juice
½ cup vegetable stock
salt and pepper to taste
Louisiana hot sauce to taste
1 cup couscous
1 can chickpeas, rinsed and drained
2 tbsp oregano
¾ -1 cup feta, crumbled

1) In large frying pain, melt butter, brown veggies; add tomatoes, orange juice, and stock.
2) Bring to a boil, season with pepper and salt, add hot sauce.
3) Add couscous, stir, cover, turn off heat and let stand for 5 minutes.
4) Add chickpeas, oregano and feta, mix well and serve.

N.B.: The original recipe called for green beans instead of the red pepper. I like my way better, or you can use whatever other vegetables you like!
