Vegetarian Couscous with Feta

This is an awesome recipe, and you can substitute the veggies however you want...

Vegetarian Couscous with Feta

1 tbsp butter (I use olive oil or margarine)
2 cloves garlic, chopped (or just 1 tsp garlic powder)
1 onion, chopped
2-3 stalks celery, sliced
1 yellow or green pepper, diced
1 red pepper, diced
1 can diced tomatoes with juice
½ cup orange juice
½ cup vegetable stock
salt and pepper to taste
Louisiana hot sauce to taste
1 cup couscous
1 can chickpeas, rinsed and drained
2 tbsp oregano
¾ -1 cup feta, crumbled

1) In large frying pain, melt butter, brown veggies; add tomatoes, orange juice, and stock.
2) Bring to a boil, season with pepper and salt, add hot sauce.
3) Add couscous, stir, cover, turn off heat and let stand for 5 minutes.
4) Add chickpeas, oregano and feta, mix well and serve.

N.B.: The original recipe called for green beans instead of the red pepper. I like my way better, or you can use whatever other vegetables you like!

Pork Chops with Orange Sauce

I got this recipe when I was about 14 years old, from a lady I used to babysit for. I had it for supper one night at her house, came home with the recipe and have been making pork chops this way ever since! It is economical and fast. The sauce is fantastic over rice or mashed potatoes. Double the sauce recipe if you are making pork chops for more than 8 people.

1. Coat both sides of pork chops generously with paprika, and rub in.
2. Heat frying pan with vegetable oil, brown chops both sides, cook for
about 20 minutes.
3. In small saucepan, mix 1/2 c orange juice (extra pulp or pulp-free)
with 1/4 c white sugar and 2 tsp cornstarch.
4. Heat through, add 1/4 tsp cinammon and 1/2 tsp cloves. Cook til
thick.
5. Pour sauce over pork chops, cook a few minutes longer and serve.

Quick tea biscuits- aka "Bill's favorite biscuits"

It has gotten to the point where I just print out a copy of this recipe any time I bring these biscuits somewhere; they are that good! They are super easy to make, and the endless variations ensure no one ever tires of them. This recipe makes 12 -13 biscuits, so I usually double the batch, or make one raisin and one chocolate chip.

-2 c flour
-4 tsp baking powder
-1/2 c white sugar
-3/4 tsp salt
-1/2 c margarine or butter
-1 egg
-3/4 c milk, scant (explanation to follow!)
-1/2 c raisins

1. Sift dry ingredients together, cut in margarine with pastry blender.
2. Add raisins (for variety, instead of raisins, add cranberries, or
blueberries, or chocolate chips!)
3. In a 3/4 c measuring cup, beat the egg, then add enough milk to fill to
top of the cup. (you don't actually need a full 3/4 cup of milk; hence
"scant")
4. Add the liquid to the dry ingredients, stir with a fork to make a soft
dough.
5. Pat dough out onto floured surface, cut into rounds. Bake on an
ungreased cookie sheet for 10-12 minutes at 375 degrees.

These are great to make when unexpected company drops in for coffee!

butter biscuits

These biscuits are super easy to make. A nice, quick add-on for supper!

-2 c flour
-2 tsp baking powder
-1/2 tsp salt
-3 tbsp sugar
-1/2 c chilled butter (1 margarine brick from the 3lb box)
-3/4 c buttermilk

1. Sift together dry ingredients, cut in butter (or margarine) with pastry blender or two knives til crumbly.
2. Add buttermilk, and mix lightly to make a soft dough.
3. Turn onto floured board, knead lightly for about 10 seconds.
4. Roll dough to 1/2" thickness, cut with 2" cutter, place on baking
sheet and bake at 425 degrees for 10-12 minutes.

best ever apple crisp recipe

We have a huge apple tree in our yard, so besides making enough apple butter to keep my husband happy, I cut up and freeze as many apples as I possibly can. For the rest of the year (or until I run out of apples from the freezer!) we enjoy this apple crisp. It can be made with fresh peeled and sliced apples as well as thawed and rinsed from freezer ones....
It makes a very large (thick) 9x13 pan.

Enjoy!

-9 cups cut up peeled apples (or enough to fill the pan 2/3 way full)
-1 c white sugar
-3 tblp flour
-2 tsp cinnamon
- mix sugar, flour and cinnamon with apples in pan.

mix in bowl:
-1 c quick oats
-1 c flour
-1 c brown sugar
-1/4 tsp baking powder
-1/4 tsp baking soda
-1/2 c melted margarine or butter
-Combine remaining ingredients, crumble over apples.
-Bake at 350 degrees for about 30-35 minutes.

Optional: after apples are mixed in pan, drizzle butterscotch topping over apples before putting on topping for a special touch!
